Cranberry Orange Cookies
1 cup butter, softened
½ cup brown sugar, packed sugar
1 cup white sugar
1 large egg
1 tablespoon orange zest
2 tablespoons fresh orange juice
2 ½ cups all-purpose flour
½ teaspoon salt
1teaspoon baking soda
1 teaspoon baking powder
1 teaspoons orange extract
2 cups dried cranberries
1 1/2 cups confectioner’s sugar
2 teaspoons orange zest
3 tablespoons fresh orange juice
Mix all the ingredients together until there aren’t any lumps.

In a large bowl, whisk together, flour, baking soda, baking powder, orange zest & salt.
In a separate bowl, cream together the butter, sugar & brown sugar. Stir in the egg, orange juice & vanilla until well blended. Stir in flour mixture; stir just until moistened.
Bake cookies in the preheated oven for 12 to 14 minutes. Remove from oven and cool on a wire rack for 10 minutes. Allow to cool completely.
Lightly dip cookies in the glaze and allow to hardened
Makes 24 cookies
Replace the orange & cranberries with lemon and dried blueberries for a non-holiday cookie.
